Super Simple Cupcakes

These cupcakes are super simple to make and are the perfect treat for any occasion. Whether it’s afternoon tea, or a special someone’s birthday, these deliciously moist cupcakes will leave you satisfied, every time.

Ingredients

    1 1/2 cups Cake Flour
    2 tsp Baking Powder
    1/2 tsp Salt
    3/4 cup Sugar
    2 Eggs
    1/2 cup Oil
    1/2 cup Buttermilk
    2 tsp Vanilla Extract

BUTTERCREAM FROSTING

    2 cups Icing Sugar
    1/2 cup Butter, softened
    1 tsp Vanilla Extract
    1/2 tbsp Milk

Directions

FOR THE CUPCAKES

    Using an electric mixer, beat the eggs in a large bowl.
    Add the sugar, continue mixing on high, until the eggs and sugar are combined.
    Pour in the oil and vanilla extract, then beat for another 30 seconds.
    In another bowl, sift the flour, baking powder, and salt together.
    Add the egg mixture to the bowl of flour and stir until all the ingredients are combined.
    Lastly stir in the buttermilk.
    Line a muffin tin with cupcake holders, then fill each one a 1/3 of the way up.
    Bake in a preheated, 180 degree Celsius oven, for approximately 15 minutes, or until a skewer inserted into the center of one, comes out clean.
    Allow the cupcakes to cool, then remove them from the tin and pipe with the buttercream frosting.
    (You can also use this recipe to make chocolate cupcakes. Use 1 1/4 cups of flour and add in 4 heaped tablespoons of cocoa powder to the dry ingredients. Follow the rest of the recipe, as is).

FOR THE BUTTERCREAM FROSTING

    Sift the icing sugar into a bowl and add the softened butter.
    Mix the butter and icing sugar together with a spoon or an electric mixer.
    Add the milk and vanilla extract, then mix until it is smooth and creamy.
    (If you are wanting to colour your frosting, add a drop or two of your food colouring now and mix through).
