Summer Ice Lollies
These summer Ice Lolly’s are perfect for those hot sunny days when you have a few friends over or for the whole family. You can try any variation of fruits in season and keep in the freezer for up to 3 months. Such fun!
Cooking Time10 minutes
1 cup (250ml) white sugar
1 cup (250ml) water
½ cup fresh blueberries
½ cup fresh pomegranate arils
Fresh mint leaves
In a medium saucepan, combine sugar and water.
Bring to a boil, stirring, until the sugar has dissolved.
Allow to cool.
Fill Popsicle moulds with the sugar syrup.
Add blueberries and pomegranate arils to each mould.
Secure the sticks and place in the freezer to set for a few hours or overnight.
Remove from moulds and serve with fresh mint.
