SUMMER FRUIT PLATTER WITH LEMON AND VANILLA GRANITA

This vanilla and lemon granita is a great accompaniment to a platter full of delicious fruit. Crunchy, citrus, ice crystals are a refreshing contrast to the sweet, juicy cuts, of perfectly ripe, late summer fruit. Here we have taken advantage of the season and chosen some mouth watering, stone fruit and luscious seedless grapes to make up our platter.

Ingredients

FRUIT SALAD

    1 medium bunch of washed seedless white grapes
    1 medium bunch of washed seedless red or black grapes
    2 dessert peaches, washed, halved and cut into slices
    2 yellow cling peaches, washed and cut into slices
    3 red plums, washed, halved and 2 cut into slices
    2 yellow plums, washed and halved

FOR THE VANILLA GRANITA

    1 cup lemon juice
    3 medium lemons - zested
    1/2 cup sugar
    1 vanilla pod
    2 1/2 cups water

Directions

TO MAKE THE GRANITA

    Bring 1 cup of water, sugar, lemon juice and lemon zest to a boil on the stove.
    Cut the vanilla pod in half lengthways and scrape out the center, using the back end of a knife.
    Add the seeds to the liquid on the stove.
    Allow it to boil gently for another 2-3 mins until the liquid is slightly sticky but not too syrupy.
    Remove it from the heat, add the remaining water, then set it aside to cool completely.
    Once cool, pour the liquid into a baking tray and place it in the freezer.
    After two hours, remove from the freezer and roughly break up the mixture with a fork.
    Place it back in the freezer and repeat this procedure every 30minutes, for another 2 hours, until the mixture resembles course crystals.
    Keep the granita in the freezer until you are ready to serve it.

ASSEMBLING THE FRUIT PLATTER

    Place a medium size bowl in the middle of a large platter.
    Place a bunch of grapes on either side of the bowl, then arrange the fruit slices and halves in groups between the grapes.
    Fill the bowl in the middle with the prepared vanilla and lemon granita, serve immediately.
