STONE FRUIT PLATTER, WITH A MINT, LIME AND CINNAMON INFUSED SYRUP

Enjoy the wonderful array of stone fruits on offer this summer, with this delicious fruit platter. In this recipe, juicy fruits are drizzled with a syrupy mint and lime dressing with hints of cinnamon. These fresh flavours and spicy undertones, enhance the sweetness of the stone fruit and take this simple dish to a new level.

Ingredients

    3 dessert peaches, washed
    2 yellow cling peaches, washed
    2 nectarines, washed
    3 apricots, washed
    4 red plums, washed
    4 yellow plums, washed
    2 kiwi fruit, peeled
    6 strawberries, washed
    3/4 cup raspberries
    3/4 cup blueberries
    2 tbsp sugar
    1 cup water
    8 mint leaves
    juice of 2 limes
    1 cinnamon stick

Directions

    To make the the syrup, bring the water, mint, cinnamon stick and lime juice to a boil on the stove for 2-3 mins.
    Take off the heat and allow to cool. Once the syrup has cooled, remove the cinnamon stick and the mint leaves.
    To prepare the fruit for the platter, slice and halve the fruit (discarding the pips).
    Arrange the cuts of fruit on a large platter, then sprinkle the berries around the plate. Drizzle the syrup evenly over all the fruit.
    Dot with a few mint leaves and serve with double cream yoghurt.
