Pepper-Buttered Toast with Pear Brie
Who doesn’t love the creamy dreamy texture of perfectly ripened Brie? In this version of our love affair with things cheesey and gooey, we have paired in-season sweet fresh pears with Brie to create a toastie that is smooth and creamy on top with a surprising crunchy sweet inner. And it takes only a few minutes to prepare. Yum!

freshly ground black pepper
Fairview Brie, or similar
Beurre Bosch Pears
small French loaf/baguette
Mix together the softened butter with black pepper, to taste.
Cut bread slices on the diagonal so that you get a large surface area for topping.
Peel and core the pear/s, slice into thin wedges.
Slice the Brie.
Lightly toast the bread on both sides.
Spread a thick layer of butter on each slice; top with pear slices and complete with Brie slices.
Place slices under a hot grill and allow the Brie to melt and brown slightly.
Remove from grill and serve immediately.
