Makers’ Strawberry and Coconut Nice Cream

Delicious homemade ice cream using summer seasonal berries. Nice cream is the term for dairy-free ice-cream. No ice cream maker required!


Cooking Methods

  • 4 cups frozen strawberries
  • 2 cans coconut cream
  • 1 vanilla bean pod, split and deseeded
  • 1/2 cup maple syrup


  1. Whip your coconut cream until soft peaks form.
  2. Add the strawberries, vanilla and syrup into a food processor and blend until thick and creamy.
  3. Fold the strawberry mixture into the whipped coconut cream and mix together until combined.
  4. Place in an ice-cream maker, if you don't have one - no problem.
  5. Please the ice cream into a freezer container - or reused 2L tub and place in the freezer for 1 hour with the lid on.
  6. After the first freeze, whisk it every 20 minutes, until it is thick enough to scoop. This is to prevent it getting icy.
