Lemon Blueberry Ice Pops

Made with yoghurt and fresh fruit, these lemon blueberry ice pops are perfect for breakfast or a protein and fruit snack on a Summer’s day.

    150 g Plain yoghurt
    4 tbsp Lemon Juice (or freshly squeezed juice of 2 lemons)
    1/2 tsp vanilla extract
    175 ml milk
    1 zest of 1 lemon
    2 tbsp agave syrup or honey
    1/4 cup Fresh blueberries, chopped
    2 Nuttikrust biscuits, crushed


    In a medium bowl, whisk together the yogurt, lemon juice, vanilla, milk, lemon zest and agave until thoroughly combined and smooth.
    Pour the mixture into your moulds and add 1 tsp blueberries in each mould.
    Freeze layer completely.
    Pour more lemon base on top of blueberries filling each cavity until 2/3 of the way full.
    Add in a few more blueberries and continue adding the lemon base until just below the fill line.
    Sprinkle crushed cookies into the cavities and press them gently with your fingertips.
    Let freeze completely, then remove the pops. Serve immediately.
