Glazed Plums with Vanilla Mascarpone

This is a quick and easy recipe that showcases plums in all their glory. The plums are still perfectly shaped and their natural sweetness still intact. A sugar glaze with a hint of cinnamon add a depth of flavour and the vanilla mascarpone acts as a perfect accompaniment. Enjoy, served as an indulgent breakfast or as a sweet treat after dinner.

    12 ripe plums, halved
    2 tbsp sugar
    Third tsp cinnamon
    1 cup water
    1 tbsp lemon juice
    1 vanilla bean, halved lengthwise, seeds removed
    1 cup mascarpone
    Third cup creme fraiche
    2 tbsp honey
    1 tbsp castor sugar
    2 tbsp cream



    Place the sugar, cinnamon, water and lemon juice into a small saucepan and heat until the liquid begins to boil and the sugar has dissolved.
    Turn the heat down and allow the syrup to simmer for 2-3 mins.
    Remove from the heat. Place the halved plums into the glaze making sure to cover the plums completely.
    Allow to cool.
    In a bowl, carefully mix together, marscapone, creme fraiche, honey, castor sugar, vanilla seeds and cream.
    Do not overbeat as you do not want the mascarpone to curdle.
    Dollop the vanilla mascarpone into the middle of a serving dish and arrange the plum halves around it.
    Drizzle the remaining syrup over the plums.
