Fruity Salsa with Pineapple
The colours of this salsa add a pop to any dish! A fruity, fresh salsa to add zest and balance to your BBQ dishes like ribs or sticky wings. This pineapple salsa is also a great addition to grilled crostinis or tacos!
- ½ large pineapple
- 1 pomegranate
- 2 spring onions
- Handful coriander
- Zest and juice of 1 lime
- 15ml (1 Tbsp) olive oil
- Salt and pepper, to taste
- Peel the pineapple and cut into small dice.
- Remove the pomegranate rubies from its skin.
- Mix all together.
- Add the lime zest and juice, as well as the olive oil.
- Season to taste.
If pomegranates are out of season, you can substitute them with chopped tomatoes, or chopped red pepper.
