Crispy Chickpea Salad with BBQ Chicken

For the BBQ Chicken:

  • 1 whole chicken
  • 125ml (1/2 cup) BBQ marinade
  • Zest and juice of 1 lemon
  • 1 small butternut, peeled and cubed
  • Salt and pepper, to taste

For the Crispy Chickpeas:

  • 1 can chickpeas
  • 2 garlic cloves, chopped
  • 10ml (2 tsp) paprika
  • 10ml (2 tsp) cumin
  • 15ml (1 Tbsp) olive oil

For the Salad:

  • 3 tomatoes, chopped
  • 1 English cucumber, chopped
  • 1 lettuce head, shredded
  • 1 green bell pepper, cubed
  • 1 small red onion, sliced


For the BBQ Chicken:

  1. Pre heat the oven to 180°C. Season the chicken well with salt and pepper. Brush with the BBQ marinade and finish with the zest and juice of 1 lemon. Place the butternut cubes around the chicken, season well with salt and black pepper and drizzle with a dash of olive oil.
  2. Place the chicken in an oven proof dish and roast for about 30-45 minutes or until cooked and golden brown. Allow to cool and shred the chicken. Mix the shredded chicken with the rest of the BBQ marinade and set aside until needed.
  3. For the Crispy Chickpeas:

    1. Drain and rinse the chickpeas. Pat them dry with a kitchen towel and mix with the rest of the ingredients.
    2. Place on a baking tray and bake for 10-15 minutes in your pre heated oven until golden brown and crispy.
    3. For the Salad:

      1. Layer all ingredients in a jar or salad bowl with the shredded chicken, roasted butternut and crispy chickpeas.
