Creamy Coriander and Lime Skillet Chicken

Delicious juicy chicken breasts, fried till golden, then gently simmered in a skillet of creamy paprika, lime juice and coriander. This is a tasty dish, filled with aromatic tangy flavours, that is super quick and easy to prepare. Give it a bash this week, it’s definitely worth it!

    3 to 4 skinless, boneless chicken breasts
    3 tbsp Extra Virgin Olive Oil
    1 clove garlic, minced
    1 medium onion, finely chopped
    1 cup good quality chicken stock
    3 tbsp freshly squeezed lime juice
    1/2 cup cream
    3 tbsp fresh coriander, freshly chopped
    3/4 tsp smoked paprika
    1/2 tsp smoked chilli flakes
    Freshly ground salt and black pepper



    Heat 2 tbsp olive oil, to a medium heat, in a skillet.
    Season the chicken breast fillets with freshly ground salt and pepper.
    Place them in the skillet and cook them on each side for approximately 8-9 minutes, depending on the thickness of the chicken breasts.
    Once almost cooked through, set them aside on a dish and cover with tin foil.
    Add 1 tbsp extra virgin olive oil to the skillet and gently fry the garlic and onions till soft and translucent.
    Add, chicken stock, lime juice, chopped coriander, smoked paprika and smoked chilli flakes, to the skillet, stirring continuously.
    Season with freshly ground salt and pepper, then allow to simmer for about 2-3minutes.
    Stir in cream, then add the cooked chicken breasts.
    Spoon the creamy sauce over them and leave them to cook, on a med to low heat, for a further 3-4 mins.
    Remove the skillet from the heat and serve warm (in the skillet), with freshly chopped coriander and lime wedges, on the side.
    This dish is delicious accompanied with minty, feta couscous.
