Chicken or Chickpea Mayo (Loadshedding-friendly)

- 1 whole rotisserie chicken Or 2 x tins chickpeas (Vegan option)
- 4 Tbsp B-Well mayo or Food Lover's Mayo
- 1 onion, finely chopped
- 1 tbsp lemon juice
- 1 tsp curry powder
- 8 slices of bread (of choice)
- 1 pack garden leaves
Shred the roasted chicken into fine pieces, or drain the chickpeas into a bowl and crush with a fork.
Add the mayo and finely chopped onions to the mix.
Season well with lemon juice, curry powder, pepper and salt.
Spread onto the bread. Toast on the coals, or gas stove to make toasties, or add the green leaves and enjoy as a fresh, tasty sandwich.
Chickpeas are high in protein, and fibre. They also contain nutrients such as folate and iron, and a low GI index.
Add chilli sauce, or curry powder if you prefer more punch to your flavours.
