Balanced Lunch Box Idea

This balanced lunch box idea is perfect for the whole family! Do not worry if you have some fussy eaters who don’t fancy veggies – you’ll be sneaking them in and no one will even notice.

For the Sneaky Veggie Sauce:

  • 125ml (1/2 cup) plain double thick yoghurt
  • 250ml (1 cup) baby spinach
  • 125ml (1/2 cup) frozen peas
  • 1 ripe avocado
  • Zest and juice of 1 lime
  • Salt and black pepper, to taste

For the Chicken Wrap:

  • 4 whole wheat wraps
  • 2 Food Lover’s Market fresh chicken fillets, steamed and shredded
  • 1 tomato, sliced
  • 2 spring onions, sliced diagonally
  • 250ml (1 cup) smoked cheddar cheese, grated
  • Wild rocket, to taste
  • Salt and black pepper, to taste

To Complete the Lunch Box:

  • ½ cucumber, sliced
  • 250g fresh strawberries
  • 100g nuts, roasted
  • 4 x Food Lover’s Market 250ml juice boxes


For the Sneaky Veggie Sauce:

  1. Place all ingredients into a blender and blend until you have a smooth sauce. Season to taste.
  2. For the Chicken Wrap:

    1. Mix 2/3 of the sauce with the shredded chicken, taste and adjust seasoning if needed.
    2. Place the wraps on a work surface and cover with the remaining sauce. Place the tomato and spring onion on the wraps, followed by the chicken, cheese and wild rocket. Season to taste.
    3. Fold the bottom side of the wrap ¼ way in, then do the same at the top. Roll the wrap up and slice as you prefer.
    4. To Complete the Lunch Box:

      1. Place the chicken wrap in your lunch box with all the accompaniments.
