Aquafaba French Toast with Mango and Macadamia Butter

For the French Toast:

  • 4 slices of French loaf
  • 125ml (1/2 cup) aquafaba (chickpea water)
  • 60ml (1/4 cup) Almond Breeze Sweetened Vanilla Milk
  • 10ml (2 tsp) ground cinnamon
  • 5ml (1 tsp) vanilla extract

For the Topping:

  • 1 mango, peeled and sliced
  • 60ml (1/4 cup) macadamia butter
  • Maple syrup, to taste (optional)


For the French Toast:

  1. Combine the aquafaba, vanilla almond milk, cinnamon and vanilla extract and mix well.
  2. Heat a medium frying pan and add 10ml (2 tsp) coconut oil on a medium heat.
  3. Dip the French loaf slices very quickly into the aquafaba mixture – do not soak. Fry for about 4-5 minutes per side or until cooked and crispy.
  4. For the Topping:

    1. Top the French toast with macadamia butter, fresh mango and maple syrup.
